On a day when I'm not feeling well, and the weather outside has turned from hot and humid to cool and breezy it just seems perfect to make soup. I've been wanting to make potato soup for a while now, and I had half a bag of organic russet potatoes that needed to be used before they went bad. Plus we've been on a little bit of a bacon kick here (at least my 3 years old daughter has) and it was a nice way to have a little bit of bacon but not feel unhealthy.
Potato Soup
6 slices of bacon, chopped
1 medium sized onion, chopped
3 stalks of celery, chopped
3 medium carrots, chopped
6 small russet potatoes, chopped
32 oz of reduced sodium chicken broth
3 tablespoons of all purpose flour
1 cup of milk
8 oz container of sour cream
cheese of your choice
salt and pepper, to taste
*make sure you have a blender on hand as you will need it to blend some of the soup

8 oz container of sour cream
cheese of your choice

*make sure you have a blender on hand as you will need it to blend some of the soup
- Chop bacon, and cook at the bottom of your soup pot. Remove bacon once cooked and set aside. Drain most of bacon grease leaving just enough to cook with at the bottom of the pot.
- Add chopped onion, celery, carrots and potatoes to the pot and cook for about 5 min in the bacon grease. Add salt and pepper to your liking. Cook until potatoes start to get tender.
- Add the chicken broth and cook for about 10 min, until the potatoes are all the way cooked.
- Take a good amount of the soup out and put it in a blender, and puree till smooth.
- Add back into soup pot and stir.
- Add 1 half of the sour cream cup to the soup and stir until completely blended. Cook another 5 min on low heat.
- Add a tiny bit of your crispy bacon pieces to the soup, but make sure to leave plenty for the top of your soup bowls. I also like to add a little handful of shredded cheese for extra flavor.
- Serve with some shredded cheese, sour cream, and a little bit of crispy bacon pieces :) Enjoy
